Banana Loaf

Hey guy,

another Sunday’s here. Today I wanna show you my favourite banana loaf recipe.

I don’t know if banana loaf is one of the common pastries where you come from but I personally love it as my breakfast or for a snack now and then.

So let’s start with the recipe:

You need:

  • 3 ripe bananas
  • 1 egg
  • 4 tbsp. oil (e.g. sunflower oil)
  • 1/2 tsp. salt
  • 100 gr (1/2 cup) white (granulated) sugar
  • 1 tbsp. vanilla sugar
  • 300 gr (2 1/4 cups) flour
  • 1 tbsp. baking soda
  • 4 tbsp. raisins (optional)

Step 1

Preheat the oven to 356 F/180 C and mash the bananas with a fork to a mushy consistency. I like it a bit clumpy, but you can make it as mushy as you like.



Step 2

Add all the ingredients except the flour, baking soda and the raisins and mix everything well. The riper the bananas are, the less sugar you need. Usually I add sugar by instinct, but I wouldn’t use more than half a cup.



Step 3

Add the flour and baking soda and stir the dough until smooth. Additionally you can add raisins at this point.


Step 4

Put your loaf into a greased loaf pan and bake your loaf for 45 mins.

Step 5

Cut your banana loaf in slices and serve it with some honey or other spread (e.g. Nutella).
